Buffalo Ravioli with Spinach

The delicious Italian ravioli in this recipe has been enriched with healthy buffalo's, which gives this tasty meal an extra boost of high quality protein, vitamins and minerals. By using the small buffalo's as ingredients in the filling you can create a healthy  dish without directly scaring of the more reserved eaters and let them gain their first experience with the exciting world of edible insects. Sift the flour and make a little pit in the center. Place the egg, yolk, olive oil, water and salt in this pit. Mix the ingredients and knead the dough and make it into a ball. Let the whole dough rest in plastic wrapping foil. Wash the spinach and remove any remaining steals. Fry the finely chopped onions in the olive oil and add the spinach and finally the buffalo's. Add some salt and pepper according to your own liking. Let everything drain and cool down. Using a pasta machine create raviolis and fill them with the delicious filling. Finish the dish by boiling it in water and add some salt and oil as you see fit.


  • 1 egg yolk
  • 1 whole egg
  • 300g sifted flour  
  • 2 tablespoons olive oil
  • 0.5 dl water
  • 1 teaspoon salt
  • 20 grams buffalo's
  • 600 grams of spinach
  • 1 medium onion
  • Pepper and salt
  • Teaspoon olive oil
